Instructions
- Combine rolled oats, almond butter, honey, cocoa powder, and a pinch of salt in a large bowl.
- Stir until everything is well mixed and scoopable.
- Fold in chocolate chips and peppermint extract gently.
- Mix thoroughly if using protein powder.
- Scoop tablespoon-sized portions and roll into balls.
- Place the balls on a baking sheet lined with parchment paper.
