- 2 cups Mint Oreo crumbs (about 20 Oreos)
- 1/4 cup unsalted butter, melted
- 24 oz cream cheese, room temperature
- 1 cup sugar
- 3 tbsp all-purpose flour
- 1 cup sour cream, room temperature
- 1 1/2 tbsp mint extract
- 2 tsp vanilla extract
- 4 large eggs, room temperature
- 2 1/4 cups chopped Mint Oreos (about 15 Oreos)
- 1/2 cup chocolate sauce
- Green gel icing color, optional
- 4 oz semi-sweet chocolate chips
- 6 tbsp heavy whipping cream
- 1 cup heavy whipping cream, cold
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust: In a medium-sized bowl, combine the Mint Oreo crumbs with melted butter, mixing until all crumbs are evenly moistened. Press this mixture into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then remove from the oven and let cool completely.
- Make the filling: In a large bowl, beat the cream cheese with an electric mixer until velvety smooth. Gradually add in the sugar and flour, mixing thoroughly to combine.
- Add the sour cream, mint extract, and vanilla extract, mixing until just incorporated.
- Incorporate the eggs one at a time, beating on low speed after each addition until smoothly combined.
- Fold in the chopped Mint Oreos and, if desired, a few drops of green gel icing color. Swirl gently for a marbled effect.
- Bake the cheesecake mixture over the cooled Oreo crust and spread evenly. Bake for 50-60 minutes until the center is nearly set but still slightly jiggly.
- Cool in the oven with the door cracked for about one hour. Then let it cool completely on a wire rack.
- Prepare the chocolate drizzle: In a microwave-safe bowl, combine chocolate chips and 6 tablespoons of heavy whipping cream. Microwave in 30-second intervals, stirring until silky smooth.
- Whip the remaining cold heavy whipping cream until stiff peaks form.
- Chill the cheesecake for at least 4 hours or overnight.
- Drizzle cooled chocolate sauce over the cheesecake and top with whipped cream and Mint Oreo pieces just before serving.
Notes
For best flavor, refrigerate overnight before serving. Customize with different Oreo flavors or fresh mint leaves if desired.
