- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups whipped cream
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
Instructions
- Combine graham cracker crumbs, sugar, and melted butter until evenly coated. Press into the bottom of a 9-inch springform pan to form the crust.
- Beat the cream cheese in a separate bowl until smooth and creamy. Gradually add in powdered sugar and vanilla extract, mixing until well combined.
- Fold in the whipped cream gently until fully incorporated.
- Gently fold in one cup of mixed berries.
- Pour the cheesecake mixture over the crust and spread evenly.
- Top with the remaining berries.
- Refrigerate for at least 240 minutes or overnight to set.
