A refreshing and creamy no-bake peach cheesecake that’s perfect for summer gatherings.
Ingredients
Scale
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh peaches, diced
- 1/2 cup caramel sauce
Instructions
- Prepare the crust: In a mixing bowl, combine the graham cracker crumbs with melted butter until the mixture resembles wet sand. Press the mixture evenly into the bottom of a 9-inch springform pan, forming a solid crust.
- Create the filling: In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy.
- Whip the cream: In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Add the peaches: Fold in the diced peaches, reserving some for garnish.
- Assemble the cheesecake: Pour the peach filling into the crust, spreading it evenly.
- Chill to set: Place the cheesecake in the refrigerator for at least 4 hours.
- Serve with style: Drizzle caramel sauce over the top and garnish with reserved peaches before serving.
