- ½ cup unsalted butter (melted)
- 16 ounces full-fat cream cheese (at room temperature)
- ¼ cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 2 tablespoons strawberry Jello mix
- 2 lbs fresh strawberries (washed and dried)
Instructions
- Prepare Crust: In a mixing bowl, combine graham cracker crumbs and melted butter, pressing firmly into the bottom of a 9×13-inch baking dish.
- Prepare Strawberries: Slice strawberries and toss with a little sugar. Let sit to create a syrup.
- Make Whipped Cream: Whisk heavy whipping cream and powdered sugar until soft peaks form.
- Mix Cream Cheese Filling: Beat cream cheese with granulated sugar, lemon juice, and vanilla until smooth.
- Create Cheesecake Mixture: Fold in whipped cream and add strawberry Jello mix until well combined.
- Layer Strawberries and Cheesecake: Spoon half of the cream cheese mixture over the crust, add half of the strawberries, then repeat with remaining layers.
- Top with Whipped Cream: Dollop remaining whipped cream on top and chill in the fridge for at least four hours.
Notes
Make ahead by preparing the crust and filling a day in advance. This dessert is best fresh but can be stored for up to three days in the fridge.
