Description

A creamy, no-bake dessert layered with fresh strawberries and a rich graham cracker crust, perfect for warm days and summer gatherings.


Ingredients

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 16 ounces full-fat cream cheese (at room temperature)
  • ¼ cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 2 tablespoons strawberry Jello mix
  • 2 lbs fresh strawberries (washed and dried)

Instructions

  1. Prepare Crust: In a mixing bowl, combine graham cracker crumbs and melted butter, pressing firmly into the bottom of a 9×13-inch baking dish.
  2. Prepare Strawberries: Slice strawberries and toss with a little sugar. Let sit to create a syrup.
  3. Make Whipped Cream: Whisk heavy whipping cream and powdered sugar until soft peaks form.
  4. Mix Cream Cheese Filling: Beat cream cheese with granulated sugar, lemon juice, and vanilla until smooth.
  5. Create Cheesecake Mixture: Fold in whipped cream and add strawberry Jello mix until well combined.
  6. Layer Strawberries and Cheesecake: Spoon half of the cream cheese mixture over the crust, add half of the strawberries, then repeat with remaining layers.
  7. Top with Whipped Cream: Dollop remaining whipped cream on top and chill in the fridge for at least four hours.

Notes

Make ahead by preparing the crust and filling a day in advance. This dessert is best fresh but can be stored for up to three days in the fridge.
