Description

Delightful Peach Cheesecake Bars featuring a buttery graham cracker crust, creamy cheesecake filling, and sweet, juicy peaches.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups fresh peaches, sliced
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 325°F (165°C). Prepare a 9×13 inch baking pan by greasing it lightly and lining it with parchment paper.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a medium bowl until the mixture resembles moist sand. Press this into the bottom of the prepared baking pan.
  3. Beat the softened cream cheese, 1 cup sugar, and vanilla extract together until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture evenly over the crust and spread gently.
  5. Mix sliced peaches with brown sugar, flour, and cinnamon in another bowl. Spoon this mixture atop the cream cheese layer.
  6. Bake for about 30-35 minutes, until the edges are slightly golden and set.
  7. Cool at room temperature, then refrigerate until chilled before slicing into squares.

Notes

For an extra touch, dust with powdered sugar before serving or add whipped cream.
