  • 1/4 cup heavy cream
  • 2 cups diced peaches
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • Pinch nutmeg
  • 1 tsp lemon juice
  • 1 tbsp unsalted butter, melted

Instructions

  1. Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese and granulated sugar together until smooth. Fold in the vanilla extract, sour cream, and heavy cream until creamy.
  2. Cook the Peach Filling: In a small saucepan over medium heat, combine diced peaches, brown sugar, cornstarch, ground cinnamon, nutmeg, and lemon juice. Cook until thickened, about five minutes. Remove from heat and stir in melted butter.
  3. Fill the Waffle Cones: Using a spoon or piping bag, carefully fill each waffle cone with the cheesecake mixture, leaving space for the peach filling.
  4. Top with Peach Filling: Spoon the warm peach mixture over the cheesecake filling, letting syrup drizzle down the sides.
  5. Chill and Serve: Stand completed cones upright in a cone stand or tall glass and refrigerate for at least one hour before serving.
