Description

A delightful cake that combines the sweet taste of fresh pineapple with a buttery vanilla crumb, finished with a luscious glaze.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh pineapple, diced
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup pineapple juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pan by greasing and flouring it.
  2. Cream together the softened butter and sugar using a hand mixer until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the milk until combined.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients into the wet mixture, mixing until just combined.
  7. Fold in the diced pineapple gently.
  8. Pour the batter into the prepared cake pan and bake for 30-35 minutes.
  9. While the cake bakes, melt butter and brown sugar in a saucepan over medium heat to create the glaze.
  10. Remove from heat and stir in the pineapple juice.
  11. Pour the warm glaze over the cake once it’s out of the oven.
  12. Cool the cake for a few minutes and top with additional pineapple pieces before serving.

Notes

This cake can be baked a day in advance for deeper flavors and can be customized with coconut or vanilla extract.
