- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup milk
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup fresh pineapple, diced
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/4 cup pineapple juice
Instructions
- Preheat your oven to 350°F (175°C) and prepare your cake pan by greasing and flouring it.
- Cream together the softened butter and sugar using a hand mixer until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the milk until combined.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients into the wet mixture, mixing until just combined.
- Fold in the diced pineapple gently.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes.
- While the cake bakes, melt butter and brown sugar in a saucepan over medium heat to create the glaze.
- Remove from heat and stir in the pineapple juice.
- Pour the warm glaze over the cake once it’s out of the oven.
- Cool the cake for a few minutes and top with additional pineapple pieces before serving.
Notes
This cake can be baked a day in advance for deeper flavors and can be customized with coconut or vanilla extract.
