Ingredients

  • 8 oz cream cheese, softened
  • 1 cup fresh pineapple, drained and chopped
  • 1 cup pecans, chopped and toasted
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the cream cheese and sugar until smooth, then add the vanilla and pineapple.
  3. Toast the pecans in a skillet for about 5 minutes until fragrant.
  4. Spread half of the cream cheese mixture into a greased casserole dish and sprinkle with half of the toasted pecans.
  5. Add the remaining cream cheese mixture and top with the rest of the pecans.
  6. Bake for 30-35 minutes until golden brown and crispy.
  7. Cool slightly, cut into squares, and serve warm.

Notes

Make-ahead tip: Prepare cream cheese mixture a day in advance. Store in the refrigerator until ready to bake.
