Description

Deliciously creamy and nutty cookie bars featuring a smooth cream cheese filling and a crunchy pistachio topping.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1 large egg (for filling)
  • 1/2 teaspoon vanilla extract (for filling)
  • 1 cup shelled pistachios, finely chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream the butter, granulated sugar, and brown sugar until fluffy and light.
  3. Add the egg and vanilla, mixing until well combined.
  4. Combine the dry ingredients (flour, baking soda, salt) in another bowl and gradually mix into the wet mixture.
  5. Create the base by pressing about 2/3 of the dough into the prepared pan.
  6. Make the cream cheese filling by beating the softened cream cheese with 1/4 cup sugar until smooth, then adding another egg and vanilla.
  7. Fold in the finely chopped pistachios.
  8. Spread the pistachio filling over the cookie base.
  9. Top with the remaining dough, crumbling it over the filling.
  10. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  11. Cool completely before slicing into squares.

Notes

For a different flavor, try adding chocolate chips or using a gluten-free flour blend.
