Instructions
- Beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
- Fold in the fresh raspberries carefully.
- Slice the angel food cake horizontally into three even layers.
- Spread a layer of raspberry cream between the first and second layers of cake.
- Repeat for the second layer, then frost the top and sides with remaining cream.
- Garnish with additional raspberries and mint leaves, if desired.
- Chill in the refrigerator for about 30 minutes before serving.
