Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 can (14.5 ounce) diced tomatoes with green chiles
  • 1 can (15 ounce) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup salsa
  • 4 ounce cream cheese, softened
  • 2 cups shredded cheddar cheese, divided
  • 2 cups crushed tortilla chips
  • 2 tablespoons chopped cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F and grease your 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cooking until soft, about 3 minutes.
  3. Add ground beef, breaking it up as it cooks. Brown for about 5 minutes and drain excess fat.
  4. Stir in taco seasoning, diced tomatoes, black beans, corn, and salsa. Season with salt and pepper, then simmer for 5 minutes.
  5. Spread softened cream cheese evenly over the bottom of the prepared baking dish.
  6. Pour the beef mixture over the cream cheese, spreading it evenly.
  7. Top with crushed tortilla chips and 1½ cups of shredded cheddar cheese.
  8. Bake for 15 minutes, then sprinkle on remaining cheese and bake for an additional 5 minutes until melted and bubbly.
  9. Let it rest for 5 minutes before garnishing with chopped cilantro.
