- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1 can (14.5 ounce) diced tomatoes with green chiles
- 1 can (15 ounce) black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup salsa
- 4 ounce cream cheese, softened
- 2 cups shredded cheddar cheese, divided
- 2 cups crushed tortilla chips
- 2 tablespoons chopped cilantro
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F and grease your 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cooking until soft, about 3 minutes.
- Add ground beef, breaking it up as it cooks. Brown for about 5 minutes and drain excess fat.
- Stir in taco seasoning, diced tomatoes, black beans, corn, and salsa. Season with salt and pepper, then simmer for 5 minutes.
- Spread softened cream cheese evenly over the bottom of the prepared baking dish.
- Pour the beef mixture over the cream cheese, spreading it evenly.
- Top with crushed tortilla chips and 1½ cups of shredded cheddar cheese.
- Bake for 15 minutes, then sprinkle on remaining cheese and bake for an additional 5 minutes until melted and bubbly.
- Let it rest for 5 minutes before garnishing with chopped cilantro.
