A delightful interplay of velvety layers, creamy textures, and vibrant flavors in a refreshing dessert.
Ingredients
Scale
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup sour cream
- 1 cup crushed strawberries
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 cup granola
Instructions
- Prepare the crust: In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter until it resembles wet sand. Press this mixture firmly into the bottom of your serving glasses or dish, forming a sturdy crust.
- Make the cheesecake filling: In a large bowl, beat the softened cream cheese with 1/2 cup sugar and 1 teaspoon vanilla extract until smooth and creamy.
- Whip the cream: In a separate bowl, whip 1 cup heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Prepare the strawberries: In another bowl, mix the crushed strawberries with 1/2 cup sugar and 1/2 teaspoon vanilla extract. Set aside.
- Layer the parfait: Spoon a generous amount of the cheesecake filling into each glass, topping it with a layer of the strawberry mixture and finishing with granola.
- Repeat: Add more layers, alternating between the cheesecake, strawberries, and granola until you reach the top.
- Chill: Place the parfaits in the refrigerator for at least one hour before serving.
Notes
Make the cheesecake filling and strawberry mixture a day in advance for best results. Always layer the granola just before serving to maintain its crunch.
