Description

Delicious muffins filled with fresh strawberries and a creamy center of cream cheese, perfect for breakfast or as a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 4 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, and salt.
  3. Whisk the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, being careful not to overmix.
  5. Fold in the chopped strawberries gently.
  6. Fill each muffin cup half full, add a dollop of cream cheese, then top off with more batter.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Allow the muffins to cool slightly in the tin before transferring to a cooling rack.

Notes

These muffins freeze wonderfully! Wrap tightly in plastic wrap to store in the freezer.
