- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
- 4 ounces cream cheese, softened
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the flour, sugar, baking powder, and salt.
- Whisk the melted butter, milk, eggs, and vanilla extract until smooth.
- Combine the wet and dry ingredients, being careful not to overmix.
- Fold in the chopped strawberries gently.
- Fill each muffin cup half full, add a dollop of cream cheese, then top off with more batter.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Allow the muffins to cool slightly in the tin before transferring to a cooling rack.
Notes
These muffins freeze wonderfully! Wrap tightly in plastic wrap to store in the freezer.
