Description

  • 4 tbsp unsalted butter, melted

  • 16 oz full-fat cream cheese, brick-style, softened
  • 1/2 cup powdered sugar, sifted
  • 1 tsp pure vanilla bean paste
  • 1/2 cup cold heavy whipping cream
  • 1/4 cup strawberry preserves
  • 10 additional Golden Oreo cookies (for topping)
  • 1/2 cup freeze-dried strawberries
  • 2 tbsp unsalted butter, melted (for topping)

Instructions

  1. Prepare the crust: Pulse 24 Golden Oreos in a food processor until fine, then mix with melted butter and salt.
  2. Form the base: Press the crust mixture into the bottom of mini muffin tins and chill.
  3. Make the filling: Beat the cream cheese, powdered sugar, and vanilla until smooth.
  4. Whip the cream: In a separate bowl, whip the heavy cream to stiff peaks.
  5. Combine the whipped cream into the cream cheese mixture gently.
  6. Add the strawberry preserves, swirling them into the filling.
  7. Assemble the cheesecake bites by piping the filling over the crusts.
  8. Prepare the crunch topping: Pulse the remaining Oreos and freeze-dried strawberries, then mix with melted butter.
  9. Top each cheesecake bite with the crunchy mixture and chill for at least 4 hours before serving.
