Instructions
- Prepare the crust: Pulse 24 Golden Oreos in a food processor until fine, then mix with melted butter and salt.
- Form the base: Press the crust mixture into the bottom of mini muffin tins and chill.
- Make the filling: Beat the cream cheese, powdered sugar, and vanilla until smooth.
- Whip the cream: In a separate bowl, whip the heavy cream to stiff peaks.
- Combine the whipped cream into the cream cheese mixture gently.
- Add the strawberry preserves, swirling them into the filling.
- Assemble the cheesecake bites by piping the filling over the crusts.
- Prepare the crunch topping: Pulse the remaining Oreos and freeze-dried strawberries, then mix with melted butter.
- Top each cheesecake bite with the crunchy mixture and chill for at least 4 hours before serving.
