Description

Delightful cheesecake bites with a burst of strawberry flavor and a crunchy cookie coating.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup strawberry jam
  • 1/2 cup finely chopped fresh strawberries
  • 18 golden sandwich cookies, crushed
  • 1 oz freeze-dried strawberries, crushed
  • 3 tbsp melted butter
  • 6 oz white chocolate, melted
  • 8 fresh strawberries, for topping

Instructions

  1. Begin by placing your softened cream cheese in a large bowl. Use your electric mixer to beat it until completely smooth.
  2. Add the powdered sugar and vanilla extract. Mix these until fully combined and creamy.
  3. In a separate bowl, whip the heavy whipping cream until soft peaks begin to form.
  4. Gently fold the whipped cream into your cream cheese mixture until everything is light and fluffy.
  5. Pop your cheesecake mixture into the fridge to chill for 45-60 minutes.
  6. While that chills, blend the chopped strawberries into the strawberry jam.
  7. In another bowl, mix the crushed golden sandwich cookies, crushed freeze-dried strawberries, and melted butter until it forms a sticky mixture.
  8. Once chilled, scoop portions of the cheesecake mixture and flatten them slightly in your palm.
  9. Add a small spoonful of the strawberry filling to the center of each portion, then wrap the cheesecake mixture around the filling, rolling it into bite-sized balls.
  10. Place these shaped bites back in the fridge for 15-20 minutes to help them firm up further.
  11. Dip or lightly coat each bite with melted white chocolate.
  12. Roll each bite in the prepared strawberry crunch mixture.
  13. Arrange the coated bites on a lined tray and place them back in the fridge until set.
  14. Before serving, top each bite with a fresh strawberry.
