Description

A refreshing Strawberry Cucumber Salad bursting with flavor, perfect for summer gatherings.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced or diced
  • 1/4 cup fresh mint leaves, finely chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon sea salt

Instructions

  1. Start by washing and preparing your produce. Hull the fresh strawberries and slice them into bite-sized pieces. For the English cucumber, wash it and choose your preferred style—thin rounds or diced pieces. Place both into a large serving bowl.
  2. Finely chop the fresh mint leaves and add them to the bowl.
  3. In a small bowl, whisk together the fresh lime juice, olive oil, honey (or maple syrup), and sea salt until well combined.
  4. Pour the dressing over the strawberry, cucumber, and mint mixture in the serving bowl.
  5. Gently toss all ingredients together for even coating.
  6. Serve the salad immediately or chill in the refrigerator for 15-20 minutes before serving.
