- 2 cups fresh strawberries, hulled and sliced
- 1 large English cucumber, thinly sliced or diced
- 1/4 cup fresh mint leaves, finely chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon extra virgin olive oil
- 1 teaspoon honey or maple syrup
- 1/4 teaspoon sea salt
Instructions
- Start by washing and preparing your produce. Hull the fresh strawberries and slice them into bite-sized pieces. For the English cucumber, wash it and choose your preferred style—thin rounds or diced pieces. Place both into a large serving bowl.
- Finely chop the fresh mint leaves and add them to the bowl.
- In a small bowl, whisk together the fresh lime juice, olive oil, honey (or maple syrup), and sea salt until well combined.
- Pour the dressing over the strawberry, cucumber, and mint mixture in the serving bowl.
- Gently toss all ingredients together for even coating.
- Serve the salad immediately or chill in the refrigerator for 15-20 minutes before serving.

Best served fresh; however, it can be made ahead of time if the ingredients are prepared separately.
