Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the thawed puff pastry on a lightly floured surface into rectangles about 5×4 inches.
- Combine your sliced strawberries, sugar, cornstarch, and vanilla extract in a mixing bowl.
- Place a spoonful of the strawberry mixture on one half of each pastry rectangle.
- Fold the other half over and press to seal. Use a fork to crimp the edges.
- Brush the tops with the beaten egg.
- Arrange the pastries on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Dust with powdered sugar before serving.
