Ingredients

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1/2 cup strawberry puree
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup powdered sugar
- 1–2 tbsp milk
- Pink food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a mini muffin tin.
- Cream the butter and sugar until pale and fluffy.
- Add the eggs one at a time, beating well after each.
- Stir in the lemon juice and strawberry puree until evenly blended.
- Combine the flour, baking powder, and salt in another bowl.
- Fold the dry ingredients into the wet mixture until just combined.
- Fill the mini muffin tin about 2/3 full with batter.
- Bake for 12–15 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before transferring to a rack.
- Whisk the powdered sugar with milk to make the glaze and add food coloring if desired.
- Drizzle or dip the cooled cake bites in the glaze.
- Let the glaze set for 10–15 minutes before serving.
Notes
For best results, use fresh ingredients and avoid overmixing the batter.
