Description

A creamy cheesecake with a sweet strawberry jam swirl, cradled in a crunchy graham cracker crust, perfect for summer celebrations.

Ingredients

Scale
  • Cooking spray – A non-stick essential for easy removal.
  • 1/2 cup crushed graham cracker crumbs – The base of this cheesecake provides a buttery crunch.
  • 1 tablespoon light butter, softened – Adds moisture and richness to the crust.
  • 8 oz reduced-fat cream cheese, softened – The star ingredient for that classic creamy texture.
  • 1/4 cup sugar – Sweetens the filling just right.
  • 6 oz fat-free vanilla Greek yogurt – Incorporates a tangy flavor while keeping it lighter.
  • 2 large egg whites – Provide structure without the extra fat.
  • 2 tablespoons lemon juice – Brightens the flavor profile and balances the sweetness.
  • 1/2 teaspoon vanilla extract – A classic flavor enhancer for desserts.
  • 1 tablespoon all-purpose flour – Helps stabilize the filling.
  • 1/4 cup strawberry jam – Provides a sweet, fruity swirl that makes each slice visually captivating.

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Coat the baking pan generously with cooking spray.
  3. Combine the crushed graham crackers and softened butter in a mixing bowl.
  4. Press the graham cracker mixture firmly into the bottom of the prepared pan.
  5. Beat the cream cheese, sugar, and vanilla extract together until smooth.
  6. Incorporate the yogurt, egg whites, lemon juice, and flour gradually.
  7. Pour the filling over the crust in the pan, spreading it evenly.
  8. Stir the strawberry jam until smooth and drop spoonfuls over the filling.
  9. Swirl the jam through the filling with a knife to create a marbled effect.
  10. Bake for 25 to 30 minutes until the center is almost set.
  11. Cool to room temperature before chilling in the refrigerator for a few hours.
  12. Cut into squares and enjoy!
