Instructions
- Layer the chicken by placing it at the bottom of your slow cooker.
- Add the pineapple chunks over the chicken, spreading them evenly.
- Mix the sauce by whisking together soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes in a bowl.
- Combine everything by pouring the sauce mixture over the chicken and pineapple.
- Cook on low for 4 to 6 hours until the chicken is tender.
- Shred the chicken with two forks, discarding excess fat.
- Thicken the sauce by mixing cornstarch with water, then stirring it into the crockpot and cooking on high for 10 to 15 minutes.
