  • 1 cup pineapple chunks (fresh or canned)

  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch (for thickening)
  • 2 tablespoons water (for thickening)

Instructions

  1. Layer the chicken by placing it at the bottom of your slow cooker.
  2. Add the pineapple chunks over the chicken, spreading them evenly.
  3. Mix the sauce by whisking together soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes in a bowl.
  4. Combine everything by pouring the sauce mixture over the chicken and pineapple.
  5. Cook on low for 4 to 6 hours until the chicken is tender.
  6. Shred the chicken with two forks, discarding excess fat.
  7. Thicken the sauce by mixing cornstarch with water, then stirring it into the crockpot and cooking on high for 10 to 15 minutes.
