Deliciously thick and fluffy banana pancakes infused with cinnamon and topped with your favorite syrup or fruits.
Ingredients

- 2 cups (260g) all-purpose flour
- ¼ cup (52g) sugar
- 4 teaspoons baking powder
- ½ teaspoon ground cinnamon (optional)
- ½ teaspoon salt
- 1 large egg
- ¾ cup (180ml) milk
- 4 tablespoons (56g) butter (melted and slightly cooled)
- ½ teaspoon vanilla extract
- 1 ¼ cups (300ml) mashed banana (2–3 bananas)
Instructions
- In a large mixing bowl, combine the flour, sugar, baking powder, ground cinnamon, and salt.
- In another large measuring cup, whisk together the egg, milk, melted butter, vanilla extract, and mashed banana.
- Pour the wet ingredients into the dry ingredients and gently fold them together with a spatula.
- Let the batter rest for about 5-10 minutes.
- Heat your griddle or non-stick frying pan over medium-low heat.
- Using about 3 tablespoons of batter per pancake, pour onto the pan.
- Allow the pancakes to cook until bubbly on the surface and the edges appear set, then flip and cook for an additional minute or two.
- Serve these gorgeous, thick pancakes drizzled with maple syrup or adorned with toppings.
Notes
For a make-ahead option, prepare the batter the night before and store it in the fridge.
