- 1 cup sour cream
- 1/2 cup heavy cream
- 2 tablespoons cocoa powder
Instructions
- Preheat the oven to 325°F (160°C) and grease your 9-inch springform pan.
- Prepare the crust by combining chocolate cookie crumbs and melted butter, then pressing into the bottom of the pan.
- Mix the cheesecake filling by beating cream cheese, sugar, and vanilla until smooth.
- Incorporate the eggs, adding one at a time and mixing thoroughly.
- Add the melted dark chocolate, blending until uniform.
- Finish with sour cream, heavy cream, and cocoa powder, mixing until just combined.
- Pour the filling over the prepared crust.
- Bake in the preheated oven for 55-60 minutes until the center is set but jiggles slightly.
- Let cool in the oven with the door ajar for 1 hour.
- Chill in the refrigerator for at least 4 hours before serving.

Make ahead up to three days in advance. This cheesecake can also be frozen in slices for up to two months.
